Bacon Bleu Cheese Stuffed Burgers & Baked French Fries

What better way to utilize the last bit of bleu cheese you have in your fridge than to stuff it inside of a burger, right?

Here’s what you’ll need to make 2 burgers:

3/4 lb. lean ground beef
4 1/2 tsp. cream cheese
3 tbs. crumbled bleu cheese
3 tbs. cooked & crumbled bacon
1/4 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. pepper
1/2 lb. sliced fresh mushrooms
1/2 tsp. olive oil
1/2 tsp. water
1/2 tsp. Dijon mustard

Shape the ground beef into 4 thin patties.  Combine the cream cheese, bleu cheese and bacon bits.  Split the cream cheese mixture in half and spoon it onto 2 of the beef patties.  Top with the remaining patties and press the edges firmly to seal in the cream cheese mixture.  Combine the salt, garlic powder and pepper – sprinkle over the patties to season.

You can grill the burgers over medium heat or broil them for 5-7 minutes per side.

While the burgers are cooking, sauté the mushrooms in olive oil until tender.  Stir in water and mustard.  (this would also be a good time to cook up some more bacon to top the burgers!)

Grab your bun and make it happen – mushrooms, bacon, bleu cheese, lettuce, tomato, mayo and whatever other toppings you like!

(2 servings)
2 large baking potato
2 tbs. olive oil
1 tsp. paprika
1 tsp. garlic powder
1 tsp. chili powder
1 tsp. onion powder

Preheat over to 450 degrees.  Cut potato into wedges.  Mix olive oil, paprika, garlic powder, chili powder and onion powder.  Coat potatoes with mixture and place on baking sheet.  Bake for 45 minutes.
