Blueberry Mint Lemonade

It’s hot outside. If you dare step outside into the instant-sweat-inducing temperatures, you’re going to need a delicious fruity drink to cool you off. The perfect solution? Blueberry mint lemonade–sweet, tangy and incredibly refreshing.

Ingredients:

  • Mint leaves
  • Sugar
  • Blueberry Juice
  • 6-8 Lemons
  • Water

Put equal parts sugar and water over heat until the sugar dissolves. You’ll need this simple syrup for sweetening the lemonade and making the mint syrup. I used two cups sugar, two cups water.

I bought my blueberry juice from the store. In order to make it thicker and easier to mix, I put two cups in a pan and reduced it over heat for about 30 minutes.

Once the sugar is completely dissolved, remove the pan from the heat. Pour half into a container for use later and add mint leaves to the remaining amount in the pan. I used two cups of lightly packed mint leaves. Allow the mint leaves to steep for about 30 minutes in the pan.

Use a juicer or squeeze the juice from the lemons to make about one cup of juice.

Add the lemonade juice and the sugar water to a pitcher. Then add 3 to 4 cups of cold water, more or less to the desired strength.

Pour in blueberry juice to taste and strain the mint leaves from the water and add to lemonade. If the drink is still too sweet, add more straight lemonade juice until it tastes delicious!

The last step is optional–I added Absolut Berry Acai and garnished with a lemon slice and fresh blueberries to mine. Yum!
