I wanted to spice up breakfast this morning. Riffing off an idea from The Breakfast Club in Madison Heights, I made breakfast nachos. The recipe is incredibly simple, so I thought I’d share it.
1/4 cup black beans (drained)
2 eggs
Shredded Cheddar cheese
Tortilla chips
Fresh jalapeno and Fresno chiles – sliced (you can use any pepper you like)
Preheat oven to 425 degrees Fahrenheit Heat a non-stick skillet with a bit of butter. Add the beans and cook for about 3 minutes. Crack open the two eggs on top of the beans and scramble to combine. Cook the eggs & beans until the eggs are still a little runny. Layer tortilla chips on a baking sheet, top with egg mixture, and cheddar. Bake for 5-7 minutes, take out of oven, top with chile slices, and place back in the oven for 3-4 minutes. Take out of the oven & enjoy.
This is a versatile dish. Chorizo or seasoned ground beef would be perfect on top. Diced onions, salsa, sour cream, bacon, whatever you like – they’re your nachos.
