Occasionally I get the urge to bake. I almost always have the urge to drink beer, so it seemed almost logical to bring the two together.
A quick Google search brings up countless beer cake recipes. I gravitated toward Nigella Lawson’s Guinness Cake recipe. I choose it not only because I had a dark beer on hand, but because the cake looked like a frosty pint of Guinness.
Choose whatever recipe you’d like and then compile your ingredients…
A couple differences between Nigella’s recipe and my version: New Holland Brewing’s El Mole Ocho instead of Guinness and granulated sugar instead of caster sugar. Also, I hit the batter with a about an eighth of a teaspoon of Ancho chile powder at the end. I would up this to a fourth maybe even half a teaspoon, but that’s me.
Not sure if using one pan was the right way to go, but it was very convenient.
The cake collapsed considerably after being pulled from the oven even though a toothpick came out clean. No matter, though, the frosting filled it in quite nicely. As you can see from the photo below.
Aside from adding more chile powder, I think more beer is in order, too. I’m not a baker, so adding more liquid scares me given the repercussions, but eventually I will overcome this fear and just go for it.
