Restaurants have to get their product from somewhere right? There are a variety of purveyors of meats, poultry, fish, produce, and the like all across the country, from national chains to local companies that are family owned and operated.
Fairway Packing Company falls into the latter category. Though the Baratta family has only been in Detroit’s Eastern Market since 1989 (23 years), they’ve been working side-by-side with the region’s best chefs and culinary entrepreneurs to ensure that the best product ends up on the customer’s plate for over 55 years.
Guided by Anthony Baratta, I took a tour of their facility in the Market to see what they had to offer. The first stop was the Dry Aging Room.
Fairway dry ages meat by racking them (for a minimum of 28 days) in an environment that is highly regulated. The temperature, for example must stay between 32 and 36 degrees. The humidity must keep around 80%. There are six industrial fans to keep the air circulated, as well as ultra violet rays in the room to prevent bacteria growth. To top it off, the air is naturally purified by a wall of Himalayan salt, which not only adds to the seasoning in the air, but also aids in humidity control.
After the Dry Aging Room, we moved to look at the various products, from the fresh ground meat, to the various butchered cuts, all to the specific order of the restaurant.
Fairway Packing Company strongly encourages the use of the certified Peidmontese beef they carry for the natural and lower fat content, and cuts of the Imperial Wagyu Beef, which is the first certified Wagyu brand in the U.S. Other specialty meats include 100% pure Berkshire pork, Creekstone Farms for all of their USDA Black Angus Prime Beef, Provimi Veal, and Otto’s Farms free range chicken. Also carried by Fairway is the Dearborn Brand and Detroit Sausage Company products.
