It’s our belief that no restaurant should be reviewed in their first 3 months. However, we like to share experiences. Without any judgement, here are some photos from Republic. We were lucky enough to attend one of their soft openings ahead of the official opening on Wednesday, February 18.

The Devil Wears Prado: a spicy, tangy cocktail that includes tequila and Thai chili infused grenadine

Bone Marrow Fritters: rutabaga, lamb bacon jam, house jerky, pickled shallot
Aged Beef Tartare: egg cream, apple taragon, pickled mustard seed, house bread
Duck Pastrami: carrot emulsion, duck heart remoulade, duck cracklings
Chef’s Vegetable of the Night: Changes often, this one included turnip, greens, and a poached egg
Lamb Loin: smoked leek confit, charred cippolini, corned lamb fat, chocolate jus
Acorn Cake with smoked buttermilk ice cream
