Chicken “Hakim” (via JoeFoodie)
I had no idea what to make for dinner this evening.  Trader Joe’s organic chicken thighs were in the refrigerator & needed to be used.  With that in mind, I took the chicken out of the fridge along with some herbs de provence & grapeseed oil.  Poured some oil into a cast iron skillet & let it get really hot over medium high heat.  Salted & sprinkled herbs on the thighs.  Placed them into the skillet and cooked them about 8 minutes per side.
Removed thighs from the skillet and deglazed with Honey Moon Viogner (about 6 oz).  Added salt, pepper, more herbs, & some full fat European yogurt for creaminess.  Once the sauce came to a boil, I put thighs back into the skillet and put some cut pieces of Gloucester-Stilton cheese on top of the chicken.
The skillet was then put into a 400 degree oven for about 20-25 minutes, or until the cheese was melted and slightly crusty.
Once finished, I plated the chicken with Kashi 7 Grain Pilaf, black beans, and balsamic kale.
For an off the cuff dinner, this turned out quite well.  The sauce was rich & flavorful with a nice acidity from the wine.  Chicken was cooked well & the cheese added sharpness.
Sorry for the lack of precise measurements - I cook to taste without using proper measurements.
