Kimchi (via JoeFoodie) is a fermented cabbage dish served primarliy in Korean restaurants. Ethnic cuisines usually accompany have a fermented food with each meal. Fermented foods, especially lacto fermented, aid in digestion (Fallon, Nourishing Traditions, 94).
Kimchi is a spicy sauerkraut. Sour, crunchy, & peppery - it is a perfect compliment to full flavored, rich Korean dishes. Not all kimchi is created equal, of course. The version pictured is made in house at BiBimBap in Novi & is delicious. Layered like a lasagna, it is crisp, tart, & firey and very fresh.
