Coffee rubbed Pork Tenderloin (via JoeFoodie)

Using the latest Trader Joe’s Fearless Flyer as inspiration, I made a coffee rub with the new “Joe” medium roast coffee.  Rubs are heavy on salt & the main flavor component - in this case coffee.  The cocoa adds depth & the chili powder some heat.  

The measurements below will be enough for about 3 pounds of tenderloin - I actually used four 3/4 Lb  loins.  

8 tablespoons for medium grind coffee
8 teaspoons of Sea Salt
8 teaspoons of Organic brown sugar
2 1/2 teaspoons of fresh cracked black pepper
2 1/2 teaspoons of garlic powder
3 1/2 teaspoons of ground cumin
1 1/2 teaspoons of whole coriander seeds - coarsely ground
1/2 teaspoon Ancho chili powder
1 1/2 teaspoons of Organic cocoa powder
1/8 teaspoon of ground cinnamon

Mix all ingredients (except the pork) in a bowl.  Liberally coat the loins with the rub.  Tightly wrap each loin in plastic wrap and place in the refrigerator for around 2 or 3 hours.

Preheat oven to 350 degrees.  Place the loins on a baking sheet.  Watch the loins closely & pull them from the heat when the internal temperature reaches 145 degrees - about 20 to 25 minutes.  Once pulled from the oven, allow the pork to rest for at least 10 minutes.

This would pair well with a nice porter or a creamy stout.
