A quick, easy, & healthy dinner. Top a baked potato with a healthy portion of black beans, corn, & cheese.  I like mine spicy so I cut up a fresh jalapeno. A dollop of sour cream cools the heat when necessary.  This meal is also vegetarian & gluten free!
