#200 Biscuits & Gravy (by JoeFoodie)

A special meal for day 200.  Homemade cheddar cheese and sage cream biscuits covered in sausage gravy served with scrambled eggs.  

The key to good sausage gravy is a cast iron skillet & liberal use of fresh cracked black pepper.

Brown 3/4 of a pound of sausage in the skillet over medium high heat.  Once browned (about 8 minutes), remove sausage with slotted spoon.  Add 2 tablespoons all purpose flour to skillet with sausage drippings.  Whisk until combined.  Add 2 cups of whole milk slowly, whisking continuously.  Bring to a boil and allow to thicken (around 5-7 minutes).  Add black pepper to taste.

Ladle over biscuits & top with fresh cut sage (if available).
