Happy spring everyone, or should I say summer? It’s beautiful outside! Perfect day to grill and enjoy the nice weather, especially if your allergy medicine is working for you. Mine isn’t…I can’t breathe. Then again, I don’t normally have allergies! Anyway,
What’s for dinner?
It finally came. The day where I get to totally post a flop.I could totally fake you out and post something that I had made before, or just make it up, but I will admit when I screwed up.
I screwed up.
I saw one of those recipes from the magazine. “OOOH, that looks like something I’d like!” so I tried it. yep…I screwed up alright. It won’t be the last time, I guarantee it.
So upset about it, I didn’t even get a good shot. But I’m posting it anyway.
I was rushing. I put it together and, well, instead of probably just sprinkling it on as I should have done, I left all of the rub in the bag.
Oh yeah….spice cake rub city.
Anyway, we have Redeye BBQ Rubbed steak with roasted potatoes, red onion and cherry tomatoes tossed in some garlic and olive oil, garlic and basil (which I forgot to add to the photo) and grilled white asparagus, cherry tomatoes and red onion tossed with grilled onion, olive oil and salt. (if you don’t have a grill basket/pan…invest in one! They’re great.)
Look, I even overcooked it.
There is nothing worse than actually getting a dry steak (for me anyway, I hardly get them.)
At least the treats I made came out ok.
If you want to try the rib rub recipe, Here ya go
Redeye BBQ Rub (makes about 1/2 cup)
3 Tbsp paprika
2 Tbsp brown sugar
2 Tbsp ground coffee
2 tsp kosher salt
1 tsp black pepper
Mix and rub….(and don’t be like me and use the entire 1/2 cup on two small steaks! GAAAH)

This rub sounds great. Are you actually saying that you screwed up on these photos – because they look pretty darn good to me!
